Roasted Root Veggies with Pierogies and Asparagus

Last night, we wanted vegetables for dinner after a few days of heavier meals. Our refrigerator was full of beautiful fresh local and/or organic vegetables we’d bought at Whole Foods over the weekend. The local Kumu Farms beets were gorgeous and fresh, the asparagus was crisp, and the brussels sprouts were fresh and clean.


We had a fantastic meal of roasted caramelized red apple balsamic glazed brussels sprouts, roasted local Kumu Farms beets, and asparagus over sautéed pierogies. My wonderful boyfriend gave me the perfect compliment after we finished our meal, “I love it when you cook like this,” and he washed the dishes too. What an awesome guy!
