Spicy Cauliflower Buffalo Bites Recipe, and They are Dairy Free!

cauliflower buffalo bites

Cauliflower!  It’s that lovely, tasty veggie great for boiling, sautéing, baking, roasting, steamed, deep-fried, or even eaten raw.  With such versatility, it’s great as an appetizer or even an entree (think about tasty cauliflower steaks…)

I am a HUGE fan of buffalo sauce, and while I like chicken, I am not a fan of chicken wings – which most buffalo sauced appetizers include.  When I started seeing pictures of spicy cauliflower buffalo bites on the Internet, I was ecstatic.  Unfortunately, though, my sweetie can’t eat dairy.  Over time, I have learned to modify and/or create recipes of my own with dairy substitutes.   Here is my recipe for spicy cauliflower buffalo bites.  Enjoy!

Spicy Cauliflower Buffalo Bites

Pre-heat oven to 400 F

20 pieces chopped cauliflower (bite-sized pieces)
3/4 cup panko or regular breadcrumbs – unseasoned
1-2 eggs (or egg substitute for Vegan dish)
1/4 cup flour

1/2 cup (more or less for to preferred taste) buffalo sauce
1/2 tsp salt
1/4 tsp pepper
1/4 cup olive oil

Separate panko, eggs, and flour into three medium sized bowls

Dip cauliflower bites 1-2 at a time in 1) Flour, 2) egg, 3) panko or breadcrumbs to coat each piece partially — leave portions of the cauliflower slightly uncoated for browning

Coat a baking sheet with olive oil

Place each coated cauliflower bite onto the baking sheet

Sprinkle 1/2 tsp salt and 1/4 tsp pepper over bites

Sprinkle (do not pour) a small amount of buffalo sauce to gently “dot” the bites

Bake at 400 F for 15-20 minutes.

Pre-heat a medium-sized sauté pan on range at low/medium heat with olive oil
Remove cauliflower bites from oven and add to sauté pan

Coat the cauliflower bites with preferred amount of buffalo sauce and cover and simmer on low for 10 minutes
