One of our favored food flavor combinations is sweet and spicy, so tonight, I made Spicy Chicken Tacos with a Tropical Salsa. With lime juice and tropical fruit in the salsa, spicy chicken and onions, purple cabbage, and a spicy aioli, the layers of flavor deliver a sweet and feisty dance on the tastebuds with a hint of acidity to linger until the next bite – bite – chew – repeat

 

Spicy Chicken Tacos with Tropical Salsa

Ingredients

  • 1 chicken breast pounded thin and sliced into strips
  • 1 lime
  • 1 tsp hot sauce (I used Tapatio)
  • 1 tbsp Tajin (or other favored hot spice)
  • Salt and pepper (to taste)
  • 1/2 onion sliced into strips
  • 1 cup chopped purple cabbage
  • 2 tablespoons aioli
  • 1 kiwi
  • 1 mango
  • 8 strawberries
  • 8 medium pineapple cubes
  • 5 medium sized mint leaves

Instructions

  1. Prepare the chicken
  2. Pound chicken breast to about an inch thick
  3. Slice into strips about 2.5 inches long
  4. Squeeze half a lime to lightly cover all chicken slices
  5. Sprinkle Tajin or other hot spice, salt, and pepper onto all chicken slices
  6. Sprinkle hot sauce onto all chicken slices and set the chicken aside
  7. Tropical Salsa - as you prepare each fruit, add it to a food processor
  8. Slice mango (skin removed) into large chunks
  9. Slice kiwi (skin removed) into large chunks
  10. Remove tops of strawberries
  11. Add cubes of pineapple
  12. Add the mint leaves
  13. Squeeze half a lime into the mixture
  14. Use your food processor to chop and blend your fruit ingredients
  15. Once the salsa is completed, heat a sauté pan or grill pan on the stove
  16. Add olive oil to the pan
  17. Cook the chicken until done (about 1/2 way through, add onion strips to cook)
  18. Heat your tortillas
  19. Assemble each taco with a layer of spicy chicken and onions, purple cabbage, spicy aioli, and top with tropical salsa

To prepare the aioli, combine 2 tablespoons of mayonnaise with about a teaspoon of hot sauce.  Whisk or stir. The result should be a peach or pink mixture. Add more hot sauce to taste, if preferred.

These tacos have layer upon layer of contrasting flavors, and they are very filling.  This recipe is meant for two people. Should you wish to prepare for four, simply double your ingredients.
