Ever have that go-to ingredient for on-the-fly meals? You know, the one thing you can pull out of the fridge or cupboard and immediately make some mouthwatering delicacy to share with friends and family?
My go-to of choice for desserts is the sweet and simple strawberry. Whether it is pureed, sautéed, roasted, or chopped and macerated, strawberries are an ultimate dessert topper.
My favorite way to serve them is to roast them at 375 for about a half hour. I coat them in red wine, butter (I use vegan butter for my guy), freshly scraped vanilla bean, and brown sugar. A half-hour later, the strawberries are sweet and warm with a hint of caramel flavor left on the tongue.
This is best served over a vanilla cake or sponge cake to really soak up the strawberry juices. If you serve it over ice cream, be sure to eat right away as the warm berries will melt the ice cream quickly – unless you like that!
